I have a new favorite sandwich. It goes something like this:
-Pita bread (in halves)
-Smear Miracle Whip on one side
-Spread (leftover, LOL) Chinese mustard on the other side
-Fill it up with one of those prepared salad greens that come in a bag
-Sprinkle with Parmesan cheese
So easy to make; so very good to eat.
Since I'm on the subject of food and it is getting warmer and warmer out; here's my favorite summer salad:
- 2/3 Fresh spinach
- 1/3 Sliced fresh strawberries
- Dressing:
+ equal parts balsamic vinegar and extra-virgin olive oil
+ fold in whole raspberries
+ pour into a bottle with a tight close
+ let it age in the fridge for a few days (when you see the red berry juice streaming out, it's good to go)(you can also just but some pre-made raspberry balsamic vinaigrette)
It's really tart, only a little bit sweet, and excellent for summer.
Hm. Obviously, I haven't gotten to cook properly in a while. It just seems like such a waste to make a meal for just myself. Unfortunately, my apartment can't really accommodate the kind of dinner party I'd like to throw. I've been jonesing for good old puertorican fare, too. Maybe some mofongo stuffed with camarones al ajillo, or Serenata. *
*Mofongo is fried plantains mashed with a bit of olive oil and bacon bits; camarones al ajillo are shrimp in a tomato-based garlic sauce; and Serenata (which directly translates as "serenade") is a cod fish salad served with hot tropical root veggies drizzled with olive oil.
...and now I'm hungry. Heh.
